Couscous salad with avocado and sweet potato, mangovinegar pearls with saffron

Method of preparation:

Preheat oven to 200°C.
Prepare the couscous according to instructions on the packet.
Slice the avocado into thin strips.
Cut the sweet potato into thin rounds, coat with olive oil, and season.
Arrange on a baking tray and bake for 5-10 minutes.
Line the bottom of a bowl with a thin layer of couscous.
Add the sliced avocado.
Arrange sweet potato slices and add a spoonful of the Mango Vinegar Pearls with Saffron on top.
