Golden Kiwi with Duck Breast


Golden Kiwi
smoked Duck Breast
Truffle (optional)

Method of preparation:

Peel the kiwi and cut into little rounds using a ring mould.
Arrange the smoked duck breast on top, slice a bit of truffle and place the pearls and garnish if wanted
The fresh kiwi neutralizes the fat of the duck breast and makes the dish light and fruity.
The pearls are perfect with the duck breast adding all the sweet flavours to it.
